Loaded overnight oats
There are truly no foods I absolutely hate, but oatmeal is pretty close. I disdain the watery, flavorless instant stuff people are known to eat at their desks these days. But, I know that oats are a great staple grain to have in my diet, so I wanted to figure out a way to like them.
Thankfully, like many other young working professionals my age, I discovered overnight oats. I put as many ingredients as I can get my hands on and the texture gives off raw cookie dough vibes, but it’s healthy and filling. Feel free to mix up the ingredients with whatever you have on hand, and it’s a great way to use fruit that might be a big, overripe, because I’m all about keeping food waste to a minimum. No judging.
1 cup of steel-cut oats
1 cup almond milk
1 overripe banana, sliced
¼ cup of blueberries
2 tablespoons peanut butter
½ tsp cinnamon
½ tsp vanilla extract or paste
1 tsp chia seeds
1 tsp flax seeds
1 tsp honey
½ tsp brown sugar
- Mix everything together in a bowl.
- Place in an airtight container like a jar or a tupperware and refrigerate for at least 4-5 hours, or overnight.
Annnnd that’s it. A simple, but not boring breakfast, perfect for starting out a complicated, boring work day.
